By using a preferment Biga method, our dough achieves a thin, light and crispy crust which can be stretched to 12 - 14 inches. Pizza made with our Biga Betta Balls will hold toppings and not sag like direct method doughs, creating a much more enjoyable and reliable experience with more flavour. We recommend 350C for 2-3 minutes to achieve a beautiful Neo Neapolitan style pizza which we believe has the optimal characteristics for a pizza at home.
